  • looooool it is very nice name Summer ( Upside Down ) , we used to invite our foreigner friends to eat Maqloobeh just to explain to them why it is called Upside Down .
    Actually i don’t like it with eggplant , i like it with Potatos & Cauliflower only .
    And Summer you are amazing , how could you flip the pot without leaving any single piece of rice remaining at the bottom of that pot , is it a personal skill from Samir ?

  • Neddal, thanks for coming by, watching and leaving a comment. Upside Down is the only name i can think of to describe how this dish is made. the reason the rice did not stick to the pot because the pot used is Teffal, non stick!! glad you enjoyed the video..

  • It’s really cool! I prefer having the eggplant grilled in the oven (with spraying some oil on it of course), makes the whole meal lighter. It has been some time since i last ate upside down, will try to cook it soon.
    Oh and thanks for not using zahra, i hate it :)

  • George, thanks for coming by, watching and leaving a comment. glad you enjoyed the recipe and that you were inspired to make it. i actually try to cook low cal but with maqloobeh i think there is no other way but to make it the original recipe so you can taste the authentic flavors and great taste . but i like your recipe and i would not mind making it your way anytime! thanks!
