looooool it is very nice name Summer ( Upside Down ) , we used to invite our foreigner friends to eat Maqloobeh just to explain to them why it is called Upside Down .
Actually i don’t like it with eggplant , i like it with Potatos & Cauliflower only .
And Summer you are amazing , how could you flip the pot without leaving any single piece of rice remaining at the bottom of that pot , is it a personal skill from Samir ?

It’s really cool! I prefer having the eggplant grilled in the oven (with spraying some oil on it of course), makes the whole meal lighter. It has been some time since i last ate upside down, will try to cook it soon.
